Sunrise Quinoa with fresh fruit

Serves 4

  • 3 cups cooked quinoa
  • 3 apricots, chopped
  • 1 orange, peeled and sectioned
  • 1 cup seedless red grapes, halved
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts or pecans

Combine all ingredients except the nuts in a bowl and chill for 1 hour or overnight. Top with nuts before serving.
