Asparagus frittata


Ingredients

  • 1 Tbsp oil
  • 1 bunch asparagus (250g), sliced
  • 1 large onion, finely chopped
  • 2 rashers bacon, finely chopped
  • 4 eggs
  • 1 cup grated cheese

Method

  • Heat the oil in a heavy based pan.
  • Saute the asparagus, onion and bacon for 4 – 5 minutes or until the onion is golden brown.
  • Place in a well greased 25 cm diameter baking dish.
  • Beat the eggs and pour over the asparagus.
  • Sprinkle with the cheese.
  • Bake at 200oC for 20 – 25 minutes or until the mixture is set and golden brown.
  • Serve either cold, warm or hot.
  • Serves 4 – 5
