Carrot-raisin salad


Ingredients

  • 3 cups carrots, grated
  • 1/2 cup coconut, flaked
  • 1/2 cup raisins
  • 1/3 cup mayonnaise
  • 1/4 cup pineapple juice
  • 1/3 cup peanuts
  • 1/2 lettuce, shredded

Directions

In a bowl combine grated carrots, flaked coconut, raisins, mayonnaise, pineapple juice, and peanuts; mix well.

Cover and chill for 2 hours.

Serve over shredded lettuce.
