Chicken kebabs


  • 3 x chicken breasts skinned and diced into 2 – 3 cm chunks.Chicken Kebabs
  • 12 cherry tomatoes.
  • 2 small onions, quartered
  • 1 large green pepper cut into 2 – 3 cm cubes
  • 50 ml olive oil
  • 1 Tbsp Soya sauce
  • 2 Tbsp lemon juice
  • Half a tsp thyme leaves
  • Half a tsp pepper

Method

Using six wooden, 20cm skewers, alternately thread chicken, onion, tomato and peppers.

Arrange kebabs in a baking dish.

Combine all remaining ingredients and brush spiced oil marinade liberally over kebabs.

Cook at 180 C for 20-30 minutes until well cooked, basting with marinade twice during cooking.

Alternately, cook on the BBQ for 10 – 15 mins, turning frequently.



Serves four.
