Fifteen minute chicken & rice dinner recipe

Preparation time: 5 minutes

Cooking time: 15 minutes

Ingredients:

  • 1 tbsp cooking oil
  • 4 skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 1/3 cups water or milk
  • 1 1/2 cups quick cooking rice, uncooked

Method:

Heat oil in a large nonstick pan on medium-high heat.

Add chicken; cover. Cook 4 minutes on each side or until cooked through.

Remove chicken from skillet.

Add soup and water; stir.

Bring to boil.

Stir in rice.

Top with chicken; cover.

Cook on low heat for 5 minutes.

Sprinkle with chopped fresh rosemary, if desired.

Note: Increase oil to 2 tablespoons if using regular pan.

Serves 4.
