Broccoli casserole

Preparation time: 15 minutes

Cooking time: 45 minutes


  • 2 cups water
  • 1 tbsp butter
  • 1 cup rice
  • 2 packages frozen broccoli
  • 1 can cream of mushroom soup
  • 500 gms cheddar cheese, grated
  • 1/2 cup dry bread crumbs


Preheat oven to 160 degrees celsius. In a saucepan bring water and butter to boil. Stir in rice and cook as instructed on package. Set aside.

Thaw frozen broccoli and mix in a large bowl with hot rice, cream of mushroom soup (undiluted) and grated cheddar cheese. Spoon into a baking dish and top with dry bread crumbs.

Bake for 45 minutes.
