Butterscotch nibbles


  • 1 x 175 gram packet of butterscotch sweets
  • 40 grams butter or margarine
  • 350 grams marshmallows
  • 350 grams rice bubbles


Break butterscotch into small pieces and place in a bowl with butter. Melt in the microwave, stirring periodically to avoid burning.

Add marshmallows and stir into mix before returning it to the microwave and cooking on high a further three minutes, or until the marshmallows are softened.

Blend mixture until smooth.

Add rice bubbles and stir through mix until rice bubbles are completely coated.

Press mix into a dish and allow to cool.

Cut once set.
