Coq au vin

  • Coq Au Vin1.5kg chicken pieces
  • 3 rashers of bacon, diced finely
  • Half a cup sliced spring onions
  • 4 small onions cut into quarters
  • 250gms whole mushrooms
  • 1 crushed glove of garlic
  • 1 tsp salt
  • Half a tsp pepper
  • Half a tsp dried thyme
  • 8 small potatoes, scrubbed and halved
  • 250mls red wine
  • 250mls chicken stock
  • Chopped parsley to garnish


Saute bacon, and spring onions.

Drain and pat dry on a paper towel to remove excess fat.

Brown chicken pieces and place in a large saucepan.

Place the remaining ingredients in the saucepan and allow to simmer for 3-4 hours or until chicken is extremely tender.

Garnish with parsley to serve.
