Easy eggs benedict

  • 1/4 cup plain low fat yogurt
  • 1/4 cup light mayonnaise
  • 1 teaspoon prepared mustard
  • 8 bacon slices, cooked, cut in half
  • 2 english muffins, split and toasted
  • 2 tomato slices (optional)
  • 4 poached eggs


Warm yogurt, mayonnaise and mustard in a small saucepan on low heat for 5 minutes or until thoroughly heated, stirring frequently. Place 4 bacon pieces on each English muffin half. Top each with 1 tomato slice and 1 egg.

Spoon warm yogurt mixture over eggs. Sprinkle with paprika or chopped fresh parsley, if desired.
