Noeline’s yummy sponge

Before making this sponge I line my baking tin with glad wrap and pour in a raspberry jelly dissolved with 1 cup boiling water. Put in fridge to set, remove when set and leave on a plate while you make sponge.


  • Beat 4 egg whites until stiff
  • Bring to the boil 2 tablespoons water and 6ozs sugar
  • Pour slowly into egg whites beating all the time
  • Add egg yolks and beat in
  • Gratually fold in 6ozs cornflour, 1 dessertspoon plain flour, 1 teaspoon baking powder.
  • Sift these last 3 ingredients together twice
  • Pour into a large lined baking tin (mine is 10 inch square)
  • Bake approximately 20 minutes at 200 deg.
  • When baked (the top will spring back when presses lightly)
  • Turn out on a wire rack to cool

After the sponge is cold split in half and put the set jelly in with a layer of whipped cream. Dust top with icing sugar. Try it! this really is yummy.
