Sole with orange sauce


  • 4 sole filletsSole with Orange Sauce
  • 100ml orange juice
  • Grated rind of one orange
  • Salt and white pepper to season
  • Fresh thyme twigs
  • 50 gr butter
  • 1 egg yolk
  • 1 tsp cornflour
  • 1 Tbsp water
  • 50 ml cream
  • Paprika and orange rind to garnish


Arrange sole in a large, shallow microwave dish, overlapping tails to prevent overcooking.

Dribble orange juice and sprinkle rind, seasoning and thyme over fillets, then dab with butter.

Cover with plastic wrap, vented with a few holes from the tines of a fork, and microwave on medium for 5-7 minutes, checking regularly as sole overcooks easily.

Remove from the microwave and keep warm.

Combine egg yolk, cornflour, cream and water in a mixing bowl.

Microwave liquid drained from the cooked sole for one minute on high then add to cornflour mix, stirring well.

Microwave on medium for two minutes, whisking every 30 seconds.

Place sole in a serving dish and pour sauce over the fillets.

Garnish with orange rind and paprika before serving.
