Spanish rice


  • 1 tsp. olive oil or vegetable oil
  • 500 gms. lean mince or chicken (optional)
  • 1 lg. onion, chopped
  • 1 lg. green pepper, chopped
  • 1 1/2 cups. uncooked white or brown rice
  • 2 cups. water
  • 1 can tomatoes (whole or crushed)
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper


Heat oil over medium-high heat in large frying pan or stock pot.

Cook onions, pepper, and meat until meat is browned. (If not using meat, cook until vegetables are slightly softened.)

Add remaining ingredients, mixing thoroughly.

Bring to a boil and simmer gently, covered, over low heat for 20-30 minutes.
